Zesty Sweet & Sour Baked Salmon

Chicken Papaya Enchiladas

 

 

 

Ginger Chili

1- ~3Kg can (or 8 ~430 g. cans) Kidney Beans

1- ~3Kg can (or 8 ~430 g. cans) Diced Tomatoes

1- ~3Kg can (or 8 ~430 g. cans) Pineapple Chunks

3 cups chopped Hawaiian Ginger

3 cups chopped Maui Sweet Onion

1/4 cup Crushed Garlic

1/4 cup Virgin Olive Oil

1/8 tsp. Cayenne Red Pepper (or to taste)

Combine Kidney Beans, Diced Tomatoes, Kernel Corn, Crushed Garlic, Virgin Olive Oil and Cayenne and heat while you chop the ginger root and sweet onion. Add chopped ingredients, stir and simmer until hot. Serve with Pineapple Chunks and Sourdough Bread (La Brea Bakery products are my personal favorite! http://www.labreabakery.com/main.html)

This hearty soup is totally unique in its flavor and appeal! Add kernel corn or grilled chicken to assure this meal contains complete protein!
